Nutter Butter No-Bake Cookies

These classic no-bake cookies are upgraded with peanuts and crushed Nutter Butter cookies.

Nutter Butter No-Bake Cookies

Ingredients

  • 1 c. brown sugar, packed
  • 1/2 c. half-and-half
  • 1 c. salted butter
  • 1 c. smooth peanut butter
  • 1/4 c. Dutch-process cocoa powder
  • 1/4 tsp. kosher salt
  • 1 tbsp. vanilla extract
  • 1/2 c. roughly crushed Nutter Butter cookies
  • 1/2 c. roasted peanuts
  • 3 c. old-fashioned oats

Yields Approximately 3 Dozen Cookies

In a saucepan over medium heat, melt the brown sugar, half-and-half, butter, and peanut butter, cocoa powder, and salt. Bring the mixture to a boil, allowing it to boil for 1 minute. Remove from heat, then stir in the vanilla, Nutter Butter cookie crumbs, peanuts, and oats. Stir to combine ingredients.

Scoop the mixture onto parchment-paper lined baking sheets and chill until cookies are firm.

Ingredients

For the Peach Filling

  • 4 lbs. peaches, peeled and sliced
  • 2 tbs. lemon juice
  • 1/4 c. dark brown sugar, packed
  • 1 tbs. cornstarch
  • 1/4 c. marzipan
  • 1 tsp. vanilla extract
  • 1/8 tsp. almond extract

For the Crisp Topping

  • 1/2 c. salted butter, cut into cubes
  • 1/2 c. all-purpose flour
  • 1/4 c. dark brown sugar, packed
  • 1/2 c. rolled oats
  • 1/2 tsp. kosher salt
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/2 tsp. ground nutmeg
  • 1/2 c. chopped pecans
  • 1/2 c. chopped almonds

Preheat the oven to 350 degrees Fahrenheit.

In a bowl, toss the peaches with the lemon juice, dark brown sugar, marzipan, vanilla extract, almond extract, and cornstarch. The marizpan will start to dissolve over time. Give it the occasional stir to fully incorporate the marzipan. Set aside for at least 20 minutes.

In a bowl stir together the flour, rolled oats, kosher salt, cinnamon, ginger, nutmeg, dark brown sugar, pecans, and almonds. Cut in the butter using a pastry blender or your hands, mixing until everything is well combined. Break the bits of mixture into smaller pieces for topping.

Pour the peach filling into a greased 9×13 baking dish. Spread the crisp topping over the peaches. Bake for 35-40 minutes, until the filling is bubbly and the crisp topping is browned

Lavender+Maple Oatmeal Cookies

These cookies have lavender, maple syrup and toasted oats.

Ingredients

  • 1/2 c. salted butter
  • 1/2-1 tsp. culinary lavender buds (to taste)
  • 3/4 c. dark brown sugar, packed
  • 1/4 c. maple syrup
  • 2 large eggs, room temperature
  • 1 tsp. vanilla extract
  • 1 tsp. Kosher salt
  • 1 tsp. baking powder
  • 1 c. steel cut oats
  • 2 c. bread flour

Yields Approximately 3 dozen cookies using tablespoon-sized scoops of dough

Place the butter and lavender buds into a microwave-safe container and heat to melt the butter. Allow the butter to cool while toasting the oats. In a dry skillet, toast the oats over medium-high heat, stirring frequently. Cook the oats until they start to brown and smell toasty. Put oats aside and allow to cool.

Preheat the oven to 350 degrees Fahrenheit. Beat the melted butter with the brown sugar and the maple syrup, until the mixture is combined and lighter in color. Add the eggs and vanilla and mix to combine. In a separate bowl, mix together the salt, baking powder, oats, and flour. Add the flour mixture to the wet ingredients a little at a time, scraping the bowl after each addition until the dough is just combined.

Scoop dough onto parchment paper-lined baking sheets and bake for 12-14 minutes until the cookies are lightly browned on the sides and bottoms.
